Practice Areas — Bars & Restaurants

Know what a full house actually earned.

From a single bar to a multi-venue group, we keep sales, food cost, labor, and cash reconciled — so you know what a packed Saturday really made and exactly where the margin went.

What we hear

The friction you feel.

These are the gaps that quietly cost you money, time, and confidence. We bring structure and accuracy to each one.

01

Daily sales never reconciled back to deposits

02

Food and labor cost guessed instead of measured

03

Delivery commissions absorbed with no line for them

04

Tip pooling and payroll taxes handled by hand

05

Vendor invoices and credits piling up unmatched

06

No idea which menu items actually pay the rent

The engagement

How it runs.

The first 90 days

  1. Days 1 – 14

    Access, exports, and catch-up

We connect your POS, bank, card, payroll, and vendor accounts, then take the current quarter from raw exports to recorded transactions: sales by day and shift, invoices, payroll runs, and platform payouts.

  2. Days 15 – 45

A chart of accounts built for venues

Your chart of accounts gets rebuilt around how you operate — revenue split by channel, cost split by food, beverage, labor, and occupancy, with each location carrying its own class from the first entry.

  3. Days 46 – 90

First close and the weekly loop

Your first full close lands with prime cost by location and margin by menu item. From there the weekly sales tie-out, invoice posting, and payroll review run on a fixed schedule you can plan around.

The rhythm we keep

Every week

  • —Sales and deposits tied out by day and shift
  • —Prime cost flash: food, beverage, and labor
  • —Vendor invoices posted and credits matched
  • —Cash drawer and tip pool exceptions flagged

Every month

  • —Close completed by the tenth business day
  • —P&L, balance sheet, and cash flow per venue
  • —Sales mix and item-level margin report
  • —Payroll tax and tip credit reconciliation
  • —Delivery channel net revenue and margin

Every quarter

  • —Budget versus actuals with written variance notes
  • —Menu pricing and item-mix review
  • —Rolling 13-week cash flow forecast
  • —Owner review call: decisions, not just numbers

Every year

  • —Year-end close and tax-ready package
  • —1099 preparation for contractors
  • —Insurance, license, and filing calendar
  • —Next-year budget and target prime cost

The result

What changes when the numbers are clear.

  • 01

Daily sales that match the drawer, the bank, and the POS

  • 02

Prime cost visible weekly instead of guessed quarterly

  • 03

A real number for every menu item and every channel

  • 04

Investor or lender packages produced on request

Systems we work in

Your stack stays yours.

We work inside the systems you already run — no POS migration, no payroll change, nothing new to learn. Where something is genuinely missing, we recommend the smallest fix and nothing more.

Common questions

Before you ask.

No. We reconcile from the systems you already operate, and we never change your POS or payroll without your sign-off. If something is genuinely holding the numbers back, we show you the cost of that gap before recommending anything.

Most clients arrive three to eighteen months behind. Catch-up is quoted as a fixed fee before we start, based on transaction volume, and the monthly rhythm begins once the books reach a known starting point.

Sales against deposits, food and beverage cost, total labor including taxes and tips, and prime cost as a percentage of sales — reported per venue, never as one blended group number.

Each venue keeps its own profit and loss statement, and the group rolls into a consolidated view. Comparatives show which location is carrying the others, and where the difference actually sits.

Bookkeeping, the monthly close, your reporting package, and a recurring review call. Catch-up work, controllership, and tax preparation are scoped separately, and we tell you plainly which of them you actually need.

We prepare a tax-ready year-end package and work alongside your CPA, or coordinate with a filing partner when you do not have one. Filing itself is scoped separately and never assumed.
